Fried rice and apricot chicken
2 tb soy sauce
1 tb oil
Ts of black pepper
Ts of garlic powder
1 diced onion
1 c frozen corn
1 c frozen peas
4 c of rice cooked the day before
It has to be cold
3 green onions

Heat skillet with oil and add the onion. Corn and peas and cook for 3 minutes with a lid
Add rice soy sauce and all spices and cook for 3 minutes on low..stir do it doesn't stick.
Add green onions to top

1 pack of boneless skinless chicken thighs..cut up in pieces
2 c of flour
2 c of corn starch
2 eggs
Oil for frying
2 tb of soy sauce
Add soy sauce to the chicken
Mix the flour and starch together

Dip chicken in egg then in flour mixture and fry til golden about 5 minutes
For the sauce
Mix
1 cup of apricot preserve
Half cup of bbq sauce
2ts of soy sauce
Heat for 5 minutes and pour over cooked chicken pieces

I have to tried this recipe. I tend to cook lemon or pineapple chicken,the sweet and sour chicken. I'm tempting to make apple chicken. But this looks delish!!!
