1/4 cup corn meal
1/4 cup white flour
1/2 teaspoon salt

1 teaspoon Creole
1 egg, beaten
4-6 tilapia fillets, thawed or fresh
1/4 CUP , canola or oil for frying

Directions:
- Mix cornmeal, flour and seasonings in onebowl and the beaten egg with in another.
- Heat a skillet, preferably cast iron, on medium heat for about five minutes with oil
- Dip both sides of tilapia in egg wash and proceed to cover with cornmeal mixture, pressing if necessary.
- Pan fry each side until golden brown and don’t flip until the crust is formed.
- Serve immediately.
- so cook fish last and make your other side dishes first.
