Filling:
10 ripe peaches or 2 large cans of peaches or 6 small cans of peaches - do not drain the peaches

3 tablespoons corn starch
2 tb of vanilla flavor
1 ts of ginger
1/stick of butter- softened
1 teaspoon cinnamon

2 cups flour
1/4 cup granulated sugar, to sprinkle on top of crust

3/4 c of shortening or 1 stick of butter . I like butter crusts better.

Directions
Preheat the oven to 375 degrees F.
In a large bowl, combine the peaches, vanilla, nutmeg, cinnamon ginger .brown sugar,butter ,granulated sugar and corn starch. Mix together. Transfer into a pot and cook for 10 minutes then
Pour mixture into a 13-inch-by-9-inch casserole dish

Combine the flour, sugar, salt, and in a large bowl and mix. Cut in the butter or crisco with a fork until the dough resembles sand. Slowly add the cold water until the dough comes together. You may not need all of the water. The dough should be sticky and not dry

Place the dough on a floured surface and knead it into a 13-inch-by-9-inch rectangle about 1/2-inch thick and place over the peach filling. ,sprinkle sugar on top of dough and bake til golden brown, about 40 minutes.
If you are using ripe peaches do not cook them.
Can you use regular pie crust for the bottom and top for the cobbler and brush it with butter and then put in 9ven to brown.
