Ingredient:
- 3 -6 catfish steaks
- ½ cup all-purpose flour
- ¼ cup flour
- 1 teaspoon Italian seasoning
- ½ teaspoon baking powder
- 1 tablespoon cayenne pepper powder
- 1 tablespoon garlic powder
- Salt and pepper to taste
- 1 lemon
- 1 bowl iced water
- Oil for deep frying
Direction:
- Clean the catfish steaks. Squeeze lemon (to get the juice) onto the catfish steaks and set it aside for 5-10 minutes.
- In a large mixing bowl, add flour, rice flour, Italian seasoning, baking powder, cayenne pepper, garlic powder, salt, pepper. Mix thoroughly.
- Take each catfish steak, soak in iced water and coat it with the batter mixture. If you want to have thicker coating, put the coated catfish steaks back to the iced water and coat them one more time.
- Heat up the oil in a frying pan under medium heat.
- Once heated, place each steak into the frying pan. Fry until the catfish steaks are golden brown or about 10 minutes each side.
- Serve it with your favorite sides. Enjoy!
