Ingredients
- 1 cup yellow cornmeal
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1 tablespoon of parsley flakes
- 2 tsp granulated sugar
- 1 tsp salt can go up more if you want more for taste
- 2 cups boiling water. 1 at a time because you want the batter to be thick
- vegetable oil for frying
Instructions
- Add cornmeal,flour baking powder parsley salt and sugar , stir well then and boiling water to a medium sized bowl and whisk until combined.
- Add just enough oil to cover the bottom of the pan to a non stick or cast iron skillet and heat over medium high heat until temperature reaches 375. Use vegetable or canola oil.
- Drop 2 tablespoons of batter into oil and fry on both sides until golden brown then drain.
Serve with collard greens or your favorite beans or honey just slap some butter and honey on it and go at it
