1/4 cup corn meal 
1/4 cup white flour
1/2 teaspoon  salt
 pepper to taste
1 teaspoon Creole 
1 egg, beaten 
4-6 tilapia fillets, thawed or fresh
1/4 CUP , canola or  oil for frying 
  1. Mix cornmeal, flour and seasonings in onebowl and the beaten egg with in another.
  2. Heat a skillet, preferably cast iron, on medium heat for about five minutes with oil
  3. Dip both sides of tilapia in egg wash and proceed to cover with cornmeal mixture, pressing if necessary.
  4. Pan fry each side until golden brown and don’t flip until the crust is formed. 
  5. Serve immediately.
  6. so cook fish last and make your other side dishes first.
