BEEF TIPS W/ RICE AND GRAVY

Ingredients
  • 1lb Sirloin Tip, or Round Steak, cut into bite size pieces
  • 3 cups Beef Broth
  • 1 Onion, sliced
  • 1 Tablespoon Bacon grease, or vegetable oil
  • 2 Tablespoons Cornstarch
  • 1 tb of seasoned salt
  • 1 ts of garlic powder
  • 2-3 cups of prepared Rice ( see my fluffy rice recipe)
Instructions
  1. Cut beef into about one inch cubes.
  2. Place a medium sized sauce pot on medium heat.
  3. Add bacon grease or cooking oil.
  4. Add beef.
  5. Add onions.
  6. Stir the meat and onions until the meat is lightly brown.
  7. Add beef broth and bring to a nice good boil.
  8. Cover, reduce heat to medium-low and simmer for 45 minutes or until beef is tender.
  9. In a small bowl, mix Cornstarch with cold water, stir well.
  10. Slowly add the cornstarch to the beef and broth, stirring constantly.
  11. Simmer another 10 minutes or until gravy has thickened.
  12. Prepare the Rice:
  13. Place rice in a medium size sauce pot.
  14. 2 cups of water for every 1 cup of rice
  15. add salt and margarine to rice and water and bring to a boil- let boil 2-3 minutes
  16. cover with a tight fitting lid
  17. after rice  Cooks for about 2-3 minutes then, reduce heat. Let rice continue to simmer on medium-low heat until most of the water has been absorbed about 20-25 minutes
  18. Let the rice rest, covered, for about 5 more minutes.
  19. Fluff the rice with a fork prior to serving.
  20. Place a portion of rice on each plate, add a serving of the Beef Tips and Gravy. As always! have dinner as a family!
