shredded chicken tacos





2 lbs boneless, skinless chicken breasts
1 packet Taco Seasoning Mix
1/2 cup shredded cheese
2 cups shredded lettuce
1 cup chopped tomatoes
1/4 cup chopped onion
1/2 cup sour cream
1/2 cup guacamole- pre made optional
12 corn tortillas
vegetable oil for frying

DIRECTIONS:

Add sliced chicken breasts to a medium saucepan. Add water to cover. Bring to a boil and reduce to medium heat. Boil until chicken is done and tender about 10 minutes.
After chicken is done, remove from cooking liquid and use two forks to shred. Discard liquid and add chicken back to saucepan. Add seasoning mix along with 1/4 cup water to pan. Bring to a boil and reduce to a simmer. Simmer until sauce thickens.
Heat oil over medium high heat in a deep saucepan. Stuff tortillas with shredded chicken, make a taco and add back to hot oil. Fry on both sides until crunchy. 1 to 2 minutes per side.
Drain on paper towels when done. Top with cheese, lettuce, tomatoes, onion and hot sauce.....cilantro.is optional
Garnish with sour cream, guacamole and salsa optional- if you live in my house by the time you make the tacos the guacamole and salsa is all gone! all you have is sour cream
