CATFISH STEW
3 tablespoons of oil or bacon fat
1 medium onion, finely diced
1/2 cup finely diced celery
1 14-ounce can petite diced tomatoes,
1 1/2 cups chicken broth
1 can to tomato sauce
1 can of tomato paste
1 tablespoon worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
1/2 teaspoon red pepper flakes
6 Red potatoes, peeled and diced in small pieces to cook faster
1 pound catfish filets, cut into 1-inch pieces and added at the end of the cooking process
also add corn small cobs which is optional and taste great
cook onions til tender in bacon fat.
Add tomatoes (crush them as you put them in) add paste and sauce, add broth,veggies, potatoes and all of the spices .if you choose to add corn on the cob at this time. Cover and simmer for 30 minutes,
Then add the catfish and cook no more than another 3 to 5 minutes, until fish is done. you do not want to over cook the fish- it does not take long to cook. cook until flaky. if you need to add a cup of water to thin out, please do do
