YELLOW RICE AND CHICKEN SKILLET

  1. Bring water and chicken bouillon to a boil in a large skillet. Add chicken breasts and ; simmer over medium heat until chicken is no longer pink in the center, about 15 minutes. Remove chicken let cool and dice.
  2. Bring 5 1/2 cups of water to a boil and add yellow rice and cook according to package- add seasonings -also add pinto beans to pot of cooking rice.
  3. when rice is done, add chicken and let sit for 5 minutes
  4.  Fluff rice with a fork before serving.
